Preheat the oven to 350 degrees
In a large bowl use hand mixer and cream together butter and sugar
Add eggs, vanilla extract and almond extract. Mix well
Combine Flour and baking soda until well combined
Using a 1/3 measuring cup, scoop cookie mix and roll into a ball. Place 6 cookie balls on a lined cookie sheet.
Using a glass flatten each cookie down
Bake for 8-11 minutes. - centre of the cookie should be puffy
Allow cookies to cool
While the cookies are cooling you can make the icing.
Using a hand mixer cream butter until smooth and creamy, slowly add in the powdered sugar almond extract and almond milk until it is a smooth texture.
Add 3-4 drops of neon food coloring if desired and mix well
Using an angled icing spatula, add icing on the cookie when the cookie is still slightly warm.
Start at the inner cookie and work your way around using a wide circular motion.
Once you have completed the cookies they are to be refrigerated. These cookies are meant to be served cold.
