Ingredients
Fudge Ingredients:
⅓ cup coconut oil
⅓ cup maple syrup
⅓ cup peanut butter
1 teaspoon vanilla
Topping Ingredients:
½ cup chocolate chips
1 teaspoon coconut oil
Instructions
Add the coconut oil and maple syrup to a small saucepan and bring to boil. Boil for about 1 minute then remove from heat.
Add the peanut butter and vanilla and stir to combine.
Pour the mixture into a mini muffin pan.
Pop into the freezer.
While the fudge hardens a bit in the freezer, place your chocolate chips and coconut oil in a small bowl and melt the microwave. Make sure to microwave them in short bursts, first 30 seconds, then 10 seconds at a time after that so it doesn't scorch.
Once the fudge has hardened a little bit, take the fudge out of the freezer and pour the chocolate evenly over each fudge.
You can top with a littlesea salt while chocolate is still wet. Place back in the freezer for at least 30 minutes.
Remove from the freezer and pop out of the pan.
Notes
A silicon mini muffin pan is the easiest to remove the dessert from. But any kind can work.
