Use your stand mixer to combine the box cake mix, oil, and 2 eggs
Mix until the dough forms
Use a small cookie scoop to make appropriately 22 dough balls on a sheet pan lined with parchment paper
Use the rounded side of the cookie scoop to make dips in 11 of the cookie dough balls
Chill in the refrigerator
Combine the cream cheese, powdered sugar, salt, and vanilla in your stand mixer and mix until smooth
Use the small cookie scoop again to make 11 cheesecake balls, store them in a medium container, freeze for 1 hour
Preheat the oven to 350 degrees F
Place the frozen cheesecake balls in the dough balls with the dips
Place the other dough balls on top and press around the sides
Bake for 12 - 15 minutes
Optional: once the Lemon Cheesecake Stuffed Box Mix Cookies are chilled, drizzle with standard glaze and Graham cracker crumbs!
