Lemon Cheesecake Stuffed Box Mix Cookie Recipe

Ingredients

  • 15.25 oz box lemon cake mix
  • ½ cup vegetable oil
  • 2 eggs
  • 1 cup cream cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions

  • Use your stand mixer to combine the box cake mix, oil, and 2 eggs
  • Mix until the dough forms
  • Use a small cookie scoop to make appropriately 22 dough balls on a sheet pan lined with parchment paper
  • Use the rounded side of the cookie scoop to make dips in 11 of the cookie dough balls
  • Chill in the refrigerator
  • Combine the cream cheese, powdered sugar, salt, and vanilla in your stand mixer and mix until smooth
  • Use the small cookie scoop again to make 11 cheesecake balls, store them in a medium container, freeze for 1 hour
  • Preheat the oven to 350 degrees F
  • Place the frozen cheesecake balls in the dough balls with the dips
  • Place the other dough balls on top and press around the sides
  • Bake for 12 - 15 minutes
