Cream butter and sugar together for 3 minutes. You want the butter and sugar to be as fluffy as possible.
Add the egg and mix for 1 minute.
Add vanilla extract, lemon extract and lemon juice.
Mix and begin adding the baking powder, baking soda and salt.
Add in the flour, ½ cup at a time. Mix by hand in this step as the dough gets thick.
Preheat the oven to 350 degrees and refrigerate the dough for 30 minutes.
With a cookie dough scoop, form little mounds of dough.
Drop them into the sugar you sat aside for dusting, roll them in the dough so they are completely covered with sugar.
Place them on a lightly sprayed cookie sheet, about 3” apart. The dough will spread, so leave ample room!
Bake for 10-13 minutes, being careful not to overbake. The cookies should look lightly golden in color when they are ready.
Allow to cool on the cookie sheet for about 5 minutes before removing.
