Lemon Sugar Cookies

Ingredients

  • 2 sticks of softened butter
  • 2 ½ cups flour
  • 1 ½ cup sugar + ¼ cup for rolling
  • 1 teaspoon vanilla
  • 3 teaspoons lemon juice
  • 3 teaspoons of lemon extract
  • 1 egg
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • pinch of salt

Instructions

  • Cream butter and sugar together for 3 minutes. You want the butter and sugar to be as fluffy as possible.
  • Add the egg and mix for 1 minute.
  • Add vanilla extract, lemon extract and lemon juice.
  • Mix and begin adding the baking powder, baking soda and salt.
  • Add in the flour, ½ cup at a time. Mix by hand in this step as the dough gets thick.
  • Preheat the oven to 350 degrees and refrigerate the dough for 30 minutes.
  • With a cookie dough scoop, form little mounds of dough.
  • Drop them into the sugar you sat aside for dusting, roll them in the dough so they are completely covered with sugar.
  • Place them on a lightly sprayed cookie sheet, about 3” apart. The dough will spread, so leave ample room!
  • Bake for 10-13 minutes, being careful not to overbake. The cookies should look lightly golden in color when they are ready.
  • Allow to cool on the cookie sheet for about 5 minutes before removing.
