Nerds Cupcakes with Cream Cheese Frosting

Ingredients

Cupcake Ingredients:

  • 1 5 Oz Box of Rainbow Nerds
  • 1 15 oz Box White Cake Mix

Cream Cheese Frosting Ingredients:

  • 8 oz Cream Cheese
  • 2 Tablespoons Butter softened
  • 4 cups Powdered Icing Sugar as needed
  • 1-2 Tablespoons Milk
  • 1 5 oz Box of Rainbow Nerds

Instructions

  • Preheat oven to 350F.
  • Line a muffin tray with cupcake liners and set aside.
  • In a large bowl, beat together the white cake mix and Nerds for 2 minutes.
  • Scoop the cupcake batter with a ⅓ cup measuring cup into the prepared cupcake liners.
  • Bake for 25-28 minutes, until an inserted toothpick comes out clean.
  • Allow the cupcakes to cool completely before frosting. (1-2 hours)
  • In a large bowl, beat together the cream cheese, butter and powdered icing sugar for 2 minutes, then add the nerds. Beat to incorporate, then add the milk as needed.
  • Use an offset spatula to spread the icing on the cupcake to make a smooth but thick surface
