Blackberry Hand Pies Recipe

Ingredients

  • 2 cups fresh blackberries
  • cup sugar + more for finishing
  • 1 lemon zest & juice
  • 1 tablespoon cornstarch
  • 2 pie crusts
  • 1 egg whisked
  • 4 oz cream cheese

Instructions

  • Preheat oven to 375 degrees and line a baking sheet with parchment paper
  • Roll the pie crusts out on a floured surface and cut into circles, 3-4 each crust - place the circles on the lined baking sheet
  • In a small dish whisk the egg - set aside
  • In a saucepan over medium high heat combine berries, ⅔ cup sugar, lemon juice & zest, and cornstarch
  • Bring the mixture to a boil, stirring often and smashing the berries slightly as you stir
  • Place 1 tablespoon each of berry filling and cream cheese on one side of each dough circle
  • Brush egg around the outer edge, fold over to a half circle shape, and seal the outer edge with a fork
  • Brush egg over the top and sprinkle with sugar
  • Bake for 20-25 minutes
