Now come on and let’s explore how easy it is to make these blackberry hand pies. All you need is fresh blackberries, some premade pie crust (or you can make your own of course) and a few other ingredients to give you all you need to make these little hand held delights. One crust can make 4 pies and once you make them, you’ll be hooked!
Blackberry Hand Pies Recipe
Ingredients
- 2 cups fresh blackberries
- ⅔ cup sugar + more for finishing
- 1 lemon zest & juice
- 1 tablespoon cornstarch
- 2 pie crusts
- 1 egg whisked
- 4 oz cream cheese
Instructions
- Preheat oven to 375 degrees and line a baking sheet with parchment paper
- Roll the pie crusts out on a floured surface and cut into circles, 3-4 each crust – place the circles on the lined baking sheet
- In a small dish whisk the egg – set aside
- In a saucepan over medium high heat combine berries, ⅔ cup sugar, lemon juice & zest, and cornstarch
- Bring the mixture to a boil, stirring often and smashing the berries slightly as you stir
- Place 1 tablespoon each of berry filling and cream cheese on one side of each dough circle
- Brush egg around the outer edge, fold over to a half circle shape, and seal the outer edge with a fork
- Brush egg over the top and sprinkle with sugar
- Bake for 20-25 minutes
