Ingredients

Crust Ingredients:

  • ¾ cups butter
  • ½ cup raw sugar
  • 1 tsp lemon zest
  • 2 cups flour
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon

Filling Ingredients

  • ½ cup raw sugar
  • 2 TBS all purpose flour
  • 3 cups blackberries halved
  • 1 tsp lemon zest
  • Juice of half of one lemon

Instructions

  • Preheat the oven to 350 F. Line an 8 inch baking dish with parchment paper.
  • Whisk together butter, raw sugar, and lemon zest until well incorporated.
  • Add flour, baking soda, salt, and cinnamon to the butter mixture until well incorporated.
  • Take one cup of dough and set aside for later.
  • Press the rest of the dough mixture into the bottom of the prepared baking dish and bake for 12-15 minutes. Let the crust cool completely.
  • In a medium mixing bowl combine raw sugar, flour, blackberries, lemon zest, and lemon juice until well incorporated.
  • Pour blackberry mixture on the cooled crust, and spread until even across the crust.
  • Sprinkle the crust mixture that was set aside.
  • Bake the blackberry crumb bars for 45 minutes or until golden brown.
