This recipe is so simple, you just mix your dry ingredients, your wet ingredients, and your crumb mixture to come up with a great recipe that comes together in a flash. With fresh blackberries, a buttery crust, and fresh lemon zest and juice, the flavor just absolutely sings!
Recipes with crumble topping are my favorite. I love that buttery crumble mixture and these blackberry crumble bars are the things dreams are made of for me. And I LOVE lemon, so anything with a lemon mixture like this is always a favorite in my house.

Crumb Bars

Recipe notes:
- The recipe is better with fresh lemon juice and zest.
- You bake bars by pressing the shortbread crust into the bottom of the pan and baking it. Once it cools completely, you add the berry layer with the fresh berries.
How to Store Blackberry Lemon Bars
Allow these delicious bars to come to room temperature on a wire rack. Store them in an airtight container for up to three days.
If you want to freeze the blackberry bars after you make them, you can freeze them whole or cut them into smaller pieces and freeze them individually. Wrap them tightly in plastic wrap or a freezer bag so no air can get in. Store them in the freezer for 3-6 months. I mean, if you can, I already ate the ones I froze last week, so good luck with that.

Lemon Blackberry Crumb Bars
Blackberry Lemon Crumb Bars
Ingredients
Crust Ingredients:
- ¾ cups butter
- ½ cup raw sugar
- 1 tsp lemon zest
- 2 cups flour
- ¼ tsp baking soda
- ¼ tsp salt
- 1 tsp cinnamon
Filling Ingredients
- ½ cup raw sugar
- 2 TBS all purpose flour
- 3 cups blackberries halved
- 1 tsp lemon zest
- Juice of half of one lemon
Instructions
- Preheat the oven to 350 F. Line an 8 inch baking dish with parchment paper.
- Whisk together butter, raw sugar, and lemon zest until well incorporated.
- Add flour, baking soda, salt, and cinnamon to the butter mixture until well incorporated.
- Take one cup of dough and set aside for later.
- Press the rest of the dough mixture into the bottom of the prepared baking dish and bake for 12-15 minutes. Let the crust cool completely.
- In a medium mixing bowl combine raw sugar, flour, blackberries, lemon zest, and lemon juice until well incorporated.
- Pour blackberry mixture on the cooled crust, and spread until even across the crust.
- Sprinkle the crust mixture that was set aside.
- Bake the blackberry crumb bars for 45 minutes or until golden brown.
