Ingredients

  • 1 tsp vanilla extract
  • 1 cup + 2 tbsp sifted all purpose flour
  • 1/2 cup cold sliced vegan butter
  • 1 tbsp ground flex (not a flex egg)
  • 1/2 cup raw sugar + 2tbsp for coating the cookie dough balls
  • 2 tbsp lemon juice
  • 3 tbsp lemon zest
  • 1/2 tsp baking powder
  • 1/4 tsp salt (if using unsalted butter)

Instructions

  • Cream together butter and 1/2 sugar until the mixture is light and fluffy. About 1 minute.
  • Then add in ground flex, lemon zest, lemon juice and vanilla extract. Combine everything together with the electric mixer.
  • Add in dry ingredients - sifted flour, baking powder and a pinch of salt. Mix again until combined. This is going to be a very thick dough, so do not worry about that.
  • Next add the bowl to the fridge. For about 30 minutes to 1 hour.
  • Set aside a bowl of 2Tbsp of granulated sugar to make these vegan lemon sugar cookies.
  • Cover a baking sheet in parchment paper and preheat the oven to 350F (176 C). Next, remove the dough from the fridge and use a cookie scoop to form your cookie dough balls.
  • Then roll in the 2 Tbsp of sugar that was set aside so that each dough ball is coated.
  • Place the lemon sugar cookie dough balls onto the baking sheet. Make sure that each cookie dough ball is kept about 2 inches apart since they will spread while baking.
  • Bake for 12-14 minutes until bottoms are golden brown. 
  • Remove the baking tray from the oven and set aside.
