Flax Seeds – you’ll need only seeds, without making a flex egg
Organic Brown Sugar – you can substitute this with any healthier option for sugar
Vegan Butter – brands like Earth Balance and Pure Blends are great for this recipe, you can also try out regular butter if you want don’t have a plant-based one.
Baking Powder & Salt
All-Purpose Flour – For gluten-free lemon cookies I used Krusteaz, but you can definitely use normal all-purpose flour, it’s just a preference.
How to Make Easy Lemon Cookies
This is the most delicious and easy vegan crinkle cookie recipe that takes only one bowl and a handful of ingredients to them! Here’s how it goes :
- Cream together butter and 1/2 sugar until the mixture is light and fluffy. About 1 minute.
- Then add in ground flex, lemon zest, lemon juice and vanilla extract. Combine everything together with the electric mixer.
- Add in dry ingredients – sifted flour, baking powder and a pinch of salt. Mix again until combined. This is going to be a very thick dough, so do not worry about that.
- Next add the bowl to the fridge. For about 30 minutes to 1 hour.
- Set aside a bowl of 2Tbsp of granulated sugar to make these vegan lemon sugar cookies.
- Cover a baking sheet in parchment paper and preheat the oven to 350F (176 C). Next, remove the dough from the fridge and use a cookie scoop to form your cookie dough balls.
- Then roll in the 2 Tbsp of sugar that was set aside so that each dough ball is coated.
- Place the lemon sugar cookie dough balls onto the baking sheet. Make sure that each cookie dough ball is kept about 2 inches apart since they will spread while baking.
- Bake for 12-14 minutes until bottoms are golden brown.
- Remove the baking tray from the oven and set aside.
- Cookies can be stored in the airtight container at room temperature for up to 3-4 days. You can also frozen them for about 1 month. Try out storing them in the fridge and container for about 2 weeks, but they will definitely be less chewy.
- I would suggest using real lemon flavour from real lemons. It will definitely give a more brighter flavor.
- Although they look like lemon crinkle cookies, do not worry – they are still super chewy and moist on the inside.
- If you want to give the cookies a super ”wrinkly” look, remove the pan from the oven and tap on the counter. For a more flatter cookies, press the cookie dough balls down slightly before baking.
- You can also experiment and create a simple lemon glaze using powdered sugar, lemon juice and a splash of almond milk. Drizzle them over and take these lemon cookies to the next level!
