Equipment

Ingredients

  • 1 cup whole wheat flour
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup (or honey)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/3 cup plain Greek yogurt
  • 1 large egg
  • 1 tsp vanilla extract
  • zest from 1 lemon
  • 4 tbsp lemon juice

Icing

  • 1 tsp milk/almond milk
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar

Instructions

  • Preheat the oven to 180C/350F. Line muffin tin with paper liner.
  • In a medium mixing bowl, mix in all wet ingredients. Meaning - Melted and cooled coconut oil, maple syrup, egg, Greek yogurt, lemon juice and vanilla extract. Stir to combine.
  • Add the flour, baking soda, baking powder, salt, and lemon zest to the wet ingredient mix. Stir until combined.
  • Spoon the batter into the muffin tin to 3/4 full. For this, you can use ice-cream scoop.
  • Bake for 15 minutes or until tops are puffy. You can also check it by inserting toothpick into the center, if it comes out clean, the muffins are ready.
  • Remove from the oven and allow to cool for about 5 minutes.
  • Make & Drizzle the lemon glaze over cooled-down muffins. To make the glaze, simply mix together all the ingredients and stir to combine.
