They taste amazingly plain as well, but we’re going to take them to the next level with our homemade, healthier lemon glaze. Let’s get started. And you can use this wonderful homemade lemon extract to make it taste even more complex with lemon flavor! Just add about a half a teaspoon to the batter and another to the glaze. Yummy!

Ingredients for Healthier Lemon Muffins
These ingredients are so great and wholesome. Here are all the ingredients you’re going to need for this recipe :
- Whole Wheat Flour: We used all-natural whole wheat flour, but to make them whiter, you can easily use white whole wheat flour or all-purpose flour.
- Baking Soda & Baking Powder: These both combined together are going to give muffins the perfect amount of lift.
- Large Egg
- Coconut Oil
- Greek Yogurt: This ingredient gives them extra moisture and protein. You can also use vanilla or lemon-flavored Greek Yogurt for that extra flavor.
- Freshly Squeezed Lemon Juice & Zest: The main thing that’s going to set the tone of the lemon flavor. Zest & lemon juice both give them a bright, tangy flavor.
- Maple Syrup: This is a sweetened for our recipe. You can also use Honey or Agave Syrup.
For The Glaze: all combined together are going to make the most perfect Lemon Glaze ever!
- Powdered Sugar
- Splash of Almond Milk
- Splash of Lemon Juice
- Vanilla
How to Make Healthy Lemon Muffins
This recipe takes about 30-35 minutes in total to make + time for cool down the muffins, and they are so easy to make, just mix and match, and mix and match! Here’s how it goes :
- Preheat the oven to 180C/350F. Line muffin tin with paper liner.
- In a medium mixing bowl, mix in all wet ingredients. Meaning – Melted and cooled coconut oil, maple syrup, egg, Greek yogurt, lemon juice and vanilla extract. Stir to combine.
- Add the flour, baking soda, baking powder, salt, and lemon zest to the wet ingredient mix. Stir until combined.
- Spoon the batter into the muffin tin to 3/4 full. For this, you can use ice-cream scoop.
- Bake for 15 minutes or until tops are puffy. You can also check it by inserting toothpick into the center, if it comes out clean, the muffins are ready.
- Remove from the oven and allow to cool for about 5 minutes.
- Drizzle the lemon glaze over cooled-down muffins. To make the glaze, simply mix together all the ingredients and stir to combine.
Storage: Store in a sealed container at room temperature without any glaze. Muffins can be stored for up to 3 days. Add the glaze over whenever taking the muffins out of the storage.
Freezing: Store in a sealed freezer safe container. Before serving, thaw at room temperature.

Icing
- 1 tsp milk/almond milk
- 1 tsp lemon juice
- 1 tsp vanilla extract
- 1/2 cup powdered sugar
