- 3 large eggs
- 1 cup maple syrup
- 1 cup pumpkin puree
- 1 tsp pumpkin pie spice
- 1/2 cup soy vanilla yogurt (or any other with thick consistency)
- 2 tsp baking soda
- 1 tbsp baking powder
- 1/2 cup dark chocolate chips
- 1 cup whole wheat flour
- 1/2 tsp kosher salt
- 1/2 cup coconut oil
Preheat oven to 400 degrees. Prepare one muffin tray with muffin tins. You'll be able to make 12 muffins out of this recipe.
In a medium bowl combine flour, baking soda, baking powder, pumpkin pie spice and salt.
In a large bowl combine the eggs, pumpkin puree, soy vanilla yogurt (or yogurt of your choice), maple syrup and oil until smooth, set aside.
Fold the dry ingredients into the wet ingredients just until combined. (Do not over mix). Fold in the chocolate chips.
Fill the prepared muffin tins 3/4 of the way up.
Top them off with some more dark chocolate chips.
Bake for 15 minutes or until a toothpick inserted near the center comes out mostly clean.
Allow the muffins to cool in the pan for 10 minutes before removing them to a wire rack to cool completely.
