Eggs: You’ll need 3 organic large eggs for this recipe.

Pumpkin Puree: Canned pumpkin is the same as pumpkin puree. It simply means 100% pureed pumpkin.

Salt: I like to use kosher salt but sea salt is a great option too.
White Whole Wheat Flour: This is a great middle between all-purpose flour and whole wheat flour. It’s mild in flavor and pale in color than whole wheat flour as it’s made with a different variety of wheat. But the nutritional value is similar.
Chocolate Chips: Semi-sweet or dark chocolate chips work. Keep in mind if using semi-sweet chips, the muffins will be sweeter.

How to Make Easy Pumpkin Muffins
Love that this again is an easy, quick and stress-free healthy dessert recipe that requires 2 bowls in total, huh! Here are the ingredients you’re going to need to make these delicious fall muffins :
- Preheat oven to 400 degrees. Prepare one muffin tray with muffin tins. You’ll be able to make 12 muffins out of this recipe.
- In a medium bowl combine flour, baking soda, baking powder, pumpkin pie spice and salt.
- In a large bowl combine the eggs, pumpkin puree, soy vanilla yogurt (or yogurt of your choice), maple syrup and oil until smooth, set aside.
- Fold the dry ingredients into the wet ingredients just until combined. (Do not over mix). Fold in the chocolate chips.
- Fill the prepared muffin tins 3/4 of the way up.
- Top them off with some more dark chocolate chips.
- Bake for 15 minutes or until a toothpick inserted near the center comes out mostly clean.
- Allow the muffins to cool in the pan for 10 minutes before removing them to a wire rack to cool completely.
- Store: The muffins at room temperature in an airtight container for up to 5 days.
- Freeze: I typically freeze my muffins the day I make them to make sure they stay the freshest. The muffins can be frozen for up to 2 months!
- To defrost: Simply allow them to come to room temperature on the counter for 1 hour or place in the microwave to rewarm.
