The Best Healthy Pumpkin Muffins

Soft and lightly spiced healthy pumpkin chocolate chip muffins are a favorite in our household during this time of the year. I’m sure that your family is going to appreciate these, so let’s get baking!

Perfect for the Fall Season: These pumpkin muffins do not skimp on the pumpkin spice flavor. So they make the most epic fall treat ever!

Healthy & Nutritious: The ingredient list for these muffins is easy, understandable, and nutritious altogether. I love the idea of making healthier options over packaged junk. And this is THAT fall recipe you just have to try out.

Super Easy to Make: You only need one bowl for this recipe and a muffin tray! That’s it, super convenient and perfect to also make them with kids.

Make a great Fall Gift Idea: Bake a bigger batch for these and gift them to your friends and family. If you’re also creating DIY Self Care Boxes for the fall, this is the main ingredient to gift to yourself or your loved ones. Super cozy, cute, and nutritious self-care treat recipe! 🙂

Maple Syrup: Maple syrup provides sweetness to the muffins. Honey can be used as a substitute.

Eggs: You’ll need 3 organic large eggs for this recipe.

Coconut Oil: We love using coconut oil while baking our recipes, this will give the muffins a good amount of moisture. You can also try out organic grass-fed butter or avocado oil. Skip vegetable oils for a healthier recipe.

Pumpkin Puree: Canned pumpkin is the same as pumpkin puree. It simply means 100% pureed pumpkin.

Pumpkin Pie Spice: Also known as pumpkin spice, is a spice mix of cinnamon, ginger, nutmeg, cloves, and allspice.

Baking Soda: It helps the batter rise and make the muffins light. I do not recommend a substitute.

Soy Vanilla Yogurt: This will make the muffins very fluffy and protein-rich.

Vanilla Extract: Vanilla enhances the flavor of the muffins and makes them taste yummy.

Salt: I like to use kosher salt but sea salt is a great option too.

White Whole Wheat Flour: This is a great middle between all-purpose flour and whole wheat flour. It’s mild in flavor and pale in color than whole wheat flour as it’s made with a different variety of wheat. But the nutritional value is similar.

Chocolate Chips: Semi-sweet or dark chocolate chips work. Keep in mind if using semi-sweet chips, the muffins will be sweeter.
