Mini Blueberry Galettes

Ingredients

  • 1 Pint Fresh Blueberries
  • 1/4 cup Sugar
  • 2 tbsp Cornstarch
  • 1 lemon zested and juiced
  • 1 Egg
  • 1 package premade pastry dough
  • 1 tbsp Brown sugar
  • mint for garnish

Instructions

  • Mix blueberries with sugar, corn starch, zest and lemon juice.
  • Roll out the dough, cut out circles.
  • Put the filling in the center.
  • Overlap the edges
  • Brush with egg and sprinkle with brown sugar. Bake in a preheated oven at 375 degrees for about 35 minutes
