Ingredients

  • 1 large egg
  • 1 cup all purpose flour
  • 3 ripe bananas
  • 1 tsp baking soda
  • 3/4 cup coconut sugar
  • 1/2 cup organic cocoa powder (100% pure)
  • 1/4 tsp salt
  • 1 tsp vanilla extract (or vanilla sugar)
  • 1/2 cup unsalted butter
  • 1 cup semi-sweet dark chocolate chips

Instructions

  • Heat your oven to 350°F. Can 9x5 inch load pan with parchment paper for easy removal. You can also spray the pan with extra cooking spray, but parchment paper did the job perfectly.
  • Mash bananas in the bottom of  a large bowl. Make sure the mixture is even.
  • Melt the butter and mix it in with the bananas. Add brown sugar, egg, and vanilla and mix.
  • Place baking soda, salt, flour and cocoa powder in a sifter or fine-mesh strainer and sift over wet ingredients to get rid of any and all lumps.
  • Stir wet and dry ingredients together until the mixture is smooth.
  • Mix in semi-sweet chocolate chips. Stir well.
  • Pour into prepared pan and bake 55 to 65 minutes, until a tester or toothpick inserted into the center of the cake comes out batter-free.
  • Cool in pan for 10 to 15 minutes, then run a knife around the edge and invert it out onto a cooling rack.
