Ingredients

  • 1 cup quick oats I used old fashioned oats and tossed them in the food processor
  • 1 cup vanilla protein powder
  • 1 Tbsp. ground flax
  • 12 oz. Almond Butter
  • ¼ sliced almonds
  • ¼ cup mini chocolate chips
  • ¼ cup dried cherries

Instructions

  • In a medium sized mixing bowl, combine the oats, protein powder, and flax seed and stir with a spatula.
  • Add in the almond butter and stir until the batter starts to form and is well combined.
  • Fold in the almonds, chocolate chips, and cherries.
  • Press firmly into an 8×8 baking sheet lined with wax paper. You can use the back of a spoon, bottom of a glass, or your hands.
  • Place in the freezer and freeze for 2 hours or until firm.
  • Slice into desired sized bars.

Pro Tips: If your almond butter is too thick, microwave it for 10-15 seconds to soften it before adding.

The dry ingredients should all be incorporated and resemble sticky bread dough. Add the almond butter by the teaspoon if your dough is too dry.

Storage Tip: For grab-and-go convenience, place two bars in snack-sized baggies and keep them in the freezer. When you’re ready to eat, take them out and let them thaw slightly before enjoying.

Ways to Customize This Recipe

Want to mix things up? Here are some variations:

  • Swap the Almond Butter – Use peanut butter, cashew butter, or sunflower seed butter.
  • Use Different Mix-Ins – Try dried blueberries, coconut flakes, or chopped walnuts.
  • Go Dairy-Free – Use dairy-free chocolate chips and plant-based protein powder.
  • Add Extra Sweetness – If you prefer a sweeter bar, drizzle with a bit of honey or maple syrup.
