Chia Strawberry Pudding
The ingredients for this easy & light chia pudding couldn’t be easier! All you will need is:
Chia seeds: as this is the main ingredient, it can’t be substituted. They make the pudding into its consistency.
Strawberries: Strawberries are my all-time favorite berry, but this can be substituted with any other fruit you like.
Yogurt: We used Greek Yogurt, but to make it plant-based and vegan friendly, you can use coconut or almond milk-based yogurts.
Milk: Plant-based, such as oat milk, coconut milk or almond milk are perfect for this healthy chia pudding, make sure that the ingredients are REAL, you can also use 2% milk.
Honey: This can be substituted with agave or maple syrup for a plant-based option, we used honey (it’s so good for your gut health!).
This chia pudding really requires 5 simple, healthy and wholesome ingredients to make a satiating and delicious breakfast, dessert, or snack!
This chia pudding recipe couldn’t be simpler to make! Here’s how it goes:
- First, combine the wet ingredients in a bowl. Make sure that the bowl is medium or large, so you can really mix it all in well.
- Next, add in chia seeds. Mix well!
- Then, chill. Pop the pudding in the fridge for a few hours.
- Prepare the strawberry layer. Cut the green ends off and finely chop the strawberries. Or use the chopped function of your food processor for a quick chop.
- Get creative with layering. Layer the chia pudding and strawberries among your cups.
Load up your chia seed pudding for a healthy breakfast or snack! We ended the recipe by adding date syrup on top. It made the texture so sweet and delicious, a great way to add something extra!
Check Consistency: Make sure to add in more chia seeds if the consistency doesn’t reach your desired thickness level. Also, make sure to not add too much milk, as I have discovered that some Chia Seed brands don’t puff up that well if soaked in too much liquid.
Try Out Different Toppings: switch the wet ingredients, try out adding in different nut butter, seeds, and even a banana. Change strawberries to a different fruit, if you don’t fancy them.
How to Store Chia Pudding
In the fridge: Store any leftover chia pudding in an airtight container in the fridge for up to 5 days.
In the freezer: You can also store your chia pudding in single portions in a freezer for up to 2 months.

This looks fantastic. I am a little bit suspicious about chia seeds in this mixture, so I will have to give it a try first thing in summer.

This sounds delicious. And I learned something new. I didn’t know that the seeds don’t puff up if you use too much liquid. I thought the opposite. Maybe that’s why mine don’t turn out so well. I will definitely try this recipe. Thanks.
