Oreo cupcakes
Cookies and Cream Cupcakes
Adorable fluffy light cupcakes full of oreo cookie flavor. A nod to childhood and a treat for all.
Ingredients
- 1 1/4 cup water or milk (I used milk)
- 1/3 cup vegetable oil
- 3 egg whites or 3 whole eggs (I used whole eggs)
- 8 Oreos chopped up
- Icing:
- 1 cup softened butter
- 2.5 cups icing sugar sifted
- 1 tbsp vanilla
- 2 tbsp heavy cream or milk (I used cream)
Instructions
- Cupcakes: make boxed cake mix as per instructions on the box (mix cake mix with oil, milk and eggs by hand or in a mixer on medium speed)
- add in crushed Oreos, stir
- bake as directed
- cool 10 minutes before icing cupcakes
- after icing cupcakes, crush 2 more Oreos without icing to sprinkle on top of cupcakes
- Icing: beat softened butter
- add in sifted sugar slowly
- stir in vanilla
- add in heavy cream 1 tbsp at a time
- put icing into piping bag
- decorate cupcakes as desired
