Homemade Fortune Cookie Recipe
Ingredients
- 2 egg whites
- ¼ t vanilla
- ¼ c flour
- ¼ c sugar
- ⅛ t salt
- ½ c chocolate chips
- Sprinkles to decorate
Instructions
- Preheat the oven to 400 degrees. Line a baking sheet with parchment and spray with non-stick spray. Set aside.
- Print out or write your own fortunes on a piece of paper. Each piece should measure about ½ inch by 3 inches long. Set aside.
- In a medium bowl, combine the egg white and vanilla. Whisk until frothy and bubbly.
- Add in the salt, sugar and flour. Whisk to combine well.
- Drop two spoonfuls of batter on your prepared baking sheet, at least a few inches apart. Use the back of the spoon to spread the batter into circles about 3 inches in diameter.
- Bake for approximately 5 minutes or until the edges are browned and the center is set.
- Immediately upon removing from the oven, use a spatula to work under the edge of the cookie to release it from the parchment. The cookie will be hot – use caution – but it is necessary to shape it immediately before it cools and hardens.
- Lay the cookie on your workspace and place the fortune in the center.
- Fold the edges over to conceal the fortune in the center.
- Place the folded cookie over the edge of a cup to create the crease in the center.
- Then immediately place the folded cookie into the cavity of a cupcake pan to hold the shape while it cools.
- Repeat with the remaining batter. Only bake 2 cookies at a time to ensure they are folded and shaped before cooling.
- Melt and drizzle the chocolate over the fortune cookies, if desired. Top with sprinkles
