Crumbl Copycat Cinnamon Swirl Cookies
Ingredients
SUGAR COOKIE BASE:
- 1 1/2 cups salted butter
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 3 eggs room temperature
- 3 tsp vanilla extract
- 1/4 teaspoon cinnamon
- 1/4 cup canola oil
- 1 tsp baking powder
- 4 cups flour
Cream Cheese Frosting:
- 2 tbsp salted butter- soft
- 4 oz cream cheese
- 2 tbsp brown sugar
- 2 cups powdered sugar
- 1 tsp vanilla extract
Cinnamon Brown Sugar Topping:
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 tbsp butter
- 2 teaspoon cinnamon
Instructions
- Preheat the oven to 350 degrees
- In a large bowl use hand mixer and cream together butter and sugar
- Add eggs, vanilla extract and oil. Mix well
- Combine flour, baking powder and cinnamon until well combined
- 5 Using a 1/3 measuring cup, scoop cookie mix and roll into a ball. Flatten the cookie dough slightly Place 6 cookie balls on a lined cookie sheet. Repeat with remaining dough.
- In small bowl, combine brown sugar, cinnamon and melted butter
- Once mixture is mixed thoroughly press 1/2 tbsp of the mixture on to the top of each cookie
- Bake at 350 for 9-11 minutes. Allow cookies to cool on the cookie tray.
- While the cookies are cooking you can start to make the frosting
- Combine butter and cream cheese until smooth
- Add the powdered sugar slowly to mix in to the creamcheese
- Add vanilla, continue to mix well
- Add a tablespoon of almond milk.
- Transfer frosting into a zip lock bag and cut the end
- Pipe a swirl on the top of the cookie, allow some space in between the swirl so that you can see the brown sugar.
