Shortbread is a traditional Scottish biscuit that’s known for its simplicity and rich, buttery taste. It typically consists of three main ingredients:

- Sugar: Traditionally, white sugar is used, but variations might include brown sugar or powdered sugar.
- Flour: Typically, plain or all-purpose flour is used. Some recipes might also include rice flour or cornstarch to modify the texture.
The dough for shortbread is usually mixed until it’s just combined to avoid overworking, which would result in a tougher biscuit. The name “shortbread” is derived from the term “short,” a culinary description for anything made crumbly by the presence of fat (like the “shortening” in pie crusts).

Whipped Lemon Shortbread Cookies
Light, soft, lemony melt in your mouth shortbread cookies.
Ingredients
- ½ cup of softened butter
- ½ cup of powdered sugar
- 1 cup of flour
- Juice of ½ a lemon
- 1 teaspoon of lemon extract
Instructions
Blend softened butter and powdered sugar until it is smooth, for about 3 minutes.
Add lemon juice and lemon extract, mix for an additional moment.
Add flour and mix with a spoon until the dough is smooth and soft.
Place the dough in the freezer for 15 minutes.
Preheat the oven to 350 degrees, using a small scoop, form balls of shortbread and place them on a cookie sheet that has been sprayed with non stick cooking spray.
Bake for 12 to 15 minutes, or until lightly golden brown.
