Lemon Blondie Recipe
The refreshing zest of lemons and the indulgent, rich characteristics of a traditional blondie.
Ingredients
- Cake batter
- 1 ½ cups all purpose flour
- ½ cup unsalted butter (1 stick) (room temperature)
- 1 cup raw sugar
- ½ teaspoon salt
- 2 large eggs (room temperature)
- 2 tablespoons lemon extract
- 2 tablespoons lemon zest (1 large lemon)
- Glaze Icing
- 1 cup of confectionary sugar,
- 1/3 cup heavy whipping cream
- ½ tablespoon lemon extract
- 2 tablespoon lemon zest- large shreds (1 large lemon)
Instructions
- Preheat oven to 350 degrees.
- Lightly grease the baking dish and set aside.
- You can add parchment paper if you like.
- Combine dry ingredients in a bowl, whisk and set aside.
- In another bowl combine the butter and raw sugar until creamy.
- Add 1 egg at a time, mixing each well.
- Mix until light and fluffy.
- Add lemon extract with half of the flour mixture folding together.
- Add the remainder of the flour mixture and mix on low until combined, scraping the sides halfway through.
- Do not overmix.
- Fold in the lemon zest until well incorporated.
- Pour into the baking dish evenly spread.
- Bake at 350゚for 33-35 minutes.
- Allow to cool on wire rack for 20-25 minutes before removing.
- Allow to cool completely before adding glaze icing.
- While the brownie is cooling completely, mix the glaze ingredients together, cover with plastic and set aside.
- Mix the glaze ingredients together and stir until smooth.
- Grate 1 large lemon for added topping.
