How to Make Greek Yogurt Buster Bars
Greek Yogurt Buster Bars with Maple Syrup
Ingredients
- 1 cup plain Greek yogurt
- ¼ cup creamy peanut butter
- 1 tbsp pure maple syrup
- ½ tsp pure vanilla extract
- ¼ cup mini chocolate chips
- ¼ cup chopped peanuts
- 1 ½ cups semi sweet or dark chocolate chips or chopped
- 2 ½ tsp coconut oil
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a microwave safe bowl, add peanut butter and heat for 20-30 seconds until it becomes pourable.
- In a medium sized bowl add yogurt, melted peanut butter, maple syrup, vanilla and mix until combined and smooth.
- Add in mini chocolate chips and chopped peanuts, mix until evenly incorporated.
- Using a large spoon, dallop onto prepared baking sheet and flatten to about ½ inch thick and about 4 inches in diameter. You should be able to make 6 even sized bars.
- Press a popsicle stick into each yogurt round.
- Chill in freezer for about 1 hour, until firm and frozen.
- After chilling, microwave chocolate and coconut oil and mix until smooth. dip each bar or coat using a spoon, working quickly. After completely coating each bar, place in refrigerator until each buster bar is completely set and chocolate is firm.
