Greek Yogurt Buster Bars with Maple Syrup

Ingredients

  • 1 cup plain Greek yogurt
  • ¼ cup creamy peanut butter
  • 1 tbsp pure maple syrup
  • ½ tsp pure vanilla extract
  • ¼ cup mini chocolate chips
  • ¼ cup chopped peanuts
  • 1 ½ cups semi sweet or dark chocolate chips or chopped
  • 2 ½ tsp coconut oil

Instructions

  • Line a baking sheet with parchment paper and set aside.
  • In a microwave safe bowl, add peanut butter and heat for 20-30 seconds until it becomes pourable.
  • In a medium sized bowl add yogurt, melted peanut butter, maple syrup, vanilla and mix until combined and smooth.
  • Add in mini chocolate chips and chopped peanuts, mix until evenly incorporated.
  • Using a large spoon, dallop onto prepared baking sheet and flatten to about ½ inch thick and about 4 inches in diameter. You should be able to make 6 even sized bars.
  • Press a popsicle stick into each yogurt round.
  • Chill in freezer for about 1 hour, until firm and frozen.
  • After chilling, microwave chocolate and coconut oil and mix until smooth. dip each bar or coat using a spoon, working quickly. After completely coating each bar, place in refrigerator until each buster bar is completely set and chocolate is firm.

Once fully set, transfer the bars to an airtight container and store them in the freezer for up to two weeks. When ready to eat, let them sit at room temperature for a few minutes before enjoying!
