Healthy Peanut Butter Fudge
Ingredients
Fudge Ingredients:
- ⅓ cup coconut oil
- ⅓ cup maple syrup
- ⅓ cup peanut butter
- 1 teaspoon vanilla
Topping Ingredients:
- ½ cup chocolate chips
- 1 teaspoon coconut oil
Instructions
- Add the coconut oil and maple syrup to a small saucepan and bring to boil. Boil for about 1 minute then remove from heat.
- Add the peanut butter and vanilla and stir to combine.
- Pour the mixture into a mini muffin pan.
- Pop into the freezer.
- While the fudge hardens a bit in the freezer, place your chocolate chips and coconut oil in a small bowl and melt the microwave. Make sure to microwave them in short bursts, first 30 seconds, then 10 seconds at a time after that so it doesn't scorch.
- Once the fudge has hardened a little bit, take the fudge out of the freezer and pour the chocolate evenly over each fudge.
- You can top with a littlesea salt while chocolate is still wet. Place back in the freezer for at least 30 minutes.
- Remove from the freezer and pop out of the pan.
