Healthy Peanut Butter Fudge

Ingredients

Fudge Ingredients:

  • ⅓ cup coconut oil
  • ⅓ cup maple syrup
  • ⅓ cup peanut butter
  • 1 teaspoon vanilla

Topping Ingredients:

  • ½ cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Add the coconut oil and maple syrup to a small saucepan and bring to boil. Boil for about 1 minute then remove from heat.
  • Add the peanut butter and vanilla and stir to combine.
  • Pour the mixture into a mini muffin pan.
  • Pop into the freezer.
  • While the fudge hardens a bit in the freezer, place your chocolate chips and coconut oil in a small bowl and melt the microwave. Make sure to microwave them in short bursts, first 30 seconds, then 10 seconds at a time after that so it doesn't scorch.
  • Once the fudge has hardened a little bit, take the fudge out of the freezer and pour the chocolate evenly over each fudge.
  • You can top with a littlesea salt while chocolate is still wet. Place back in the freezer for at least 30 minutes.
  • Remove from the freezer and pop out of the pan.

Notes

A silicon mini muffin pan is the easiest to remove the dessert from. But any kind can work. 

Note: Store in the freezer or fridge as they will melt!
