What is a fritter?
A fritter is a fried food usually consisting of a portion of dough or batter that envelops meat, seafood, fruit, or other ingredients. Fritters can be sweet or savory, and they’re typically fried until they’re crispy and golden brown. The basic components of a fritter include:
- Batter or Dough: This can range from a thick pancake-like batter to a dough that’s closer to bread or pastry consistency.
- Filling: This can be almost anything! Common fillings include fruits (like apples or bananas), vegetables (like corn or zucchini), or proteins (like shrimp or chicken).
- Cooking Method: Fritters are typically pan-fried or deep-fried until they achieve a crispy exterior. The batter or dough becomes golden and crunchy, while the interior remains soft and filled with the chosen ingredient.
Depending on the region or country, the composition and flavorings of fritters can vary widely. For instance:
- Apple fritters are popular in North America and are made with a batter that has chunks of apple mixed in. They’re often drizzled with glaze or sprinkled with powdered sugar.
- In Southeast Asia, you might find corn fritters or shrimp fritters made with a lightly seasoned batter and served with dipping sauces.
- Caribbean countries often serve saltfish fritters, which combine salted fish with a spicy batter.
The term “fritter” is derived from the Latin word “frictura,” which means “a fry.” Regardless of the type or origin, fritters are loved worldwide for their crispy texture and versatile fillings.

Apple Cherry Fritter Recipe
Crispy flavor bombs of simple ingredients that are super easy to make and amazing to enjoy!
Ingredients
- 2 tart apples, diced
- • ¾ cup cherries, chopped
- ◦ fresh, frozen, or maraschino will all work
- • 1 ½ cup all-purpose flour
- • 2/3 cup milk
- • ½ cup brown sugar
- • 1 egg
- • 2 TBSP butter, melted
- • 2 tsp vanilla
- • 2 tsp baking powder
- • ½ tsp cinnamon
- • ¼ tsp nutmeg
- • ¼ tsp salt
- • vegetable or olive oil for frying
- Icing Ingredients:
- • ½ cup powdered sugar
- • 3 tsp milk
Instructions
• In a medium size bowl, sift flour, baking powder, brown sugar, cinnamon, nutmeg, and salt. Set
aside.
• In a small bowl, beat together milk, egg, vanilla, and melted butter.
• Gradually mix wet ingredients into dry ingredients, until batter is smooth.
• Peel and dice apples and add to fritter batter mixture.
• Chop cherries and add to batter. Set aside.
• Prepare icing by combining powdered sugar and milk, in a small bowl, until smooth and
creamy. Set aside.
• Add oil to skillet and heat to 360°. Use candy thermometer if needed. If you don't have either,
you can heat the skillet on medium-high heat and test the oil by dropping in a small amount of
batter. If it is sizzling and frying, then the temperature is good, if not, turn up the heat a little.
• Carefully drop large spoonfuls of batter into the oil. As it browns, use a slotted spoon/spatula to
flip the fritters and fry on the other side. These should only take 1 ½ – 2 minutes per side. You
can test the first fritter to make sure the center is done.
• Transfer the fritters to paper towel to drain and then place on a wire rack to cool slightly.
• When your batch of fritters are ready and cooled slightly, drizzle with icing.
