Aaaaand, I am back again with a delicious, easy, and luscious lemon dessert recipe! I will keep on creating them, I promise you guys! You’re going to need just a few awesome ingredients :
All-Purpose Flour: You can also substitute this with gluten-free flour if needed. I do not recommend using whole wheat flour for this recipe.
Frozen or Fresh Wild Blueberries: It’s okay to also add fresh blueberries, we used frozen ones and the recipe turned out epic!
Eggs : Substitute this with flax egg for a vegan version, if you’re okay with slightly different results.
Freshly Squeezed Lemon Juice & Zest: The main thing that’s going to set the tone of the lemon flavor. Zest & lemon juice both give them a bright, tangy flavor.
Vegan Butter: Any organic butter will also work fine.
Light Brown Sugar: Any granulated sweetener of your choice is okay, brown sugar, white sugar or coconut sugar, for example.
Baking Powder & Salt
For The Glaze: all combined together are going to make the most perfect Homemade Lemon Glaze ever!
Powdered Sugar
Splash of Almond Milk
Splash of Lemon Juice
Vanilla
And you can add a teaspoon of lemon extract to these blondies for an extra layer of flavor! You can even make your own lemon extract homemade.

Blueberry Blondies
It’s a really simple blondie recipe that everyone is capable of! Here’s how it goes :
- Preheat the oven to 180C/350F.
- In a separate bowl, stir together flour, baking powder and salt, set aside.
- Next, beat softened butter, lemon zest and sugar together with a standing or hand mixer. Add eggs and mix to combine.
- Add lemon juice and mix to combine. The mixture will start to come together in the next step, don’t worry!
- Mix in flour, keep mixing until all comes together well.
- Using a rubber spatula, gently fold in frozen or fresh blueberries.
- Spread the mixture in the prepared dish and bake 25-30 minutes, or until it’s lightly golden brown on the edges and cool to a room temperature.
- To make the lemon glaze, simply mix together powdered sugar, lemon juice, lemon zest and a splash of almond milk. You can refrigerate it for around 10 minutes so that it hardens up.
- Spread over blondies and let harden, about 10 minutes, before serving.
