This recipe for strawberry champagne marshmallows is going to knock your socks off. You’ll never go back to store marshmallows. You can also control what’s in them. For instance, this recipe is gluten-free too.
Don’t be intimidated if this is your first time using a candy thermometer. Just clip it to your saucepan making sure the end isn’t touching the bottom of the pan. You can do this!
Spray a little non-stick spray on your knife or cookie cutters for way easier cutting. Marshmallows are super sticky! That’s what makes them an ooey gooey delight.

Strawberry Champagne Marshmallow Recipe
Fluffy, gooey clouds of goodness bursting with boozy sweet tangy strawberry flavor.
Ingredients
- 1/4 cup powdered sugar
- 1/4 cup cornstarch
- 2 tablespoons strawberry Jello powder
- 2 packets unflavored gelatin
- 1/2 cup champagne
- 2 tablespoons strawberry Jello powder
- 1 1/2 cups sugar
- 1/2 cup corn syrup
- 1/2 cup water
Instructions
- Line an 8x8 baking dish with parchment paper, being sure to cover the sides. Mix together the coating ingredients and cover the bottom and sides of the parchment paper with half of the mixture. Set aside.
- Prep a mixing bowl and mixer with a wire whisk, and place the gelatin, champagne, and Jello powder in the mixing bowl. Set aside.
- In a medium saucepan on medium-high heat, mix the sugar, corn syrup, and water together. Cover and heat for about four minutes.
- Remove the cover, and continue to heat the mixture until the candy thermometer reaches 240°F ( 116°C) About 5-10 additional minutes.) Remove from heat.
- Start mixing the gelatin bowl. Slowly and carefully, add in the hot corn syrup mixture. Continue to mix on low for about 12 minutes. It will have turned a light bubble gum color.
- Use a greased spatula to carefully spread the marshmallow mixture into the prepared pan.
- Sprinkle the remaining coating mixture onto top.
- Allow to set for 4 hours at room temperature.
- Cut into cubes, or grease a cookie cutter to cut into shapes. If the marshmallow is too sticky, spray nonstick cooking spray onto a paper napkin and wipe the greased napkin onto the knife or cutter as needed.
