This Meyer Lemon Curd is tart, creamy, and sweet. It makes a great spread for toast or biscuits or a great filling for cakes, cookies, and more. It takes less than 30 minutes and keeps for several weeks. And it makes the best lemon desserts!

Fruit curd is a creamy indulgent fruit spread that makes a topping, spread or filling. Curd is most commonly used to fill tarts. I’m getting hungry.
Meyer lemons are a winter fruit that is a cross between mandarin oranges and lemons. It’s unique, mild, and very good.

The lemons are thin-skinned and more round than a traditional lemon. They aren’t as tart as regular lemons, but sweeter. They are great in salads and desserts as a fruit. And the zest is far more flavorful than traditional lemon zest. I just love them. But they are only available in the winter. So I like to scoop them up and zest them all and freeze the zest or dehydrate it, squeeze out the juice and freeze it in ice cube trays. Every now and then in the off-season, I’ll pull some out and make a treat.
Tips for making lemon curd:
- Cook in stainless steel and not aluminum so you won’t get a reaction from the pan with all the acid.
- Use a thermometer to make sure you cook it long enough.
- Make sure you are using unsalted butter.
- Lemon curd freezes for up to a year.
- Curdled curd will not strain out.


Lemon curd using Meyer lemons

Meyer Lemon Curd
Creamy, tart, filling or spread with a tangy lemon flavor. Milder than traditional lemon curd with a little bit sweeter flavor.
Ingredients
- - 1 cup raw sugar
- - Zest of 2 Meyer lemons
- - 5 egg yolks
- - Half cup fresh squeezed Meyer lemon juice
- - Half cup unsalted butter
Instructions
1. Separate the yolks from the whites.
2. Zest the Meyer lemons. Pulse the lemon zest and sugar together in the food processor.
3. Place egg yolks into a pot and whisk in the sugar. Add Meyer lemon juice slowly while whisking.
4. Heat on low, while stirring constantly with a wire whisk until the bubbling point.
5. Remove pot from heat, then add the butter and mix until melted.
Notes
This recipe can be made with regular lemons for a more tart curd.

There are so many ways you can use lemon curd. You can spread it on toast, biscuits, pancakes, and things like that. Or you can fill cookies, cupcakes, cakes, etc with it. You can also fill shells and make tarts, mini tarts, and so on. Or you can even fill cookies with it. This Lemon Layer Cake is my favorite way! I also love these lemon bar cupcakes that are bomb!
