Lemon Layer Cake with Lemon Curd Filling
Moist lemony tender layer cake with sweet and tangy lemon curd filling and dreamy cream cheese frosting.
Ingredients
- For the cake:
- 2 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups granulated sugar
- 1 tablespoon lemon zest
- ½ cup butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- ¼ cup fresh lemon juice
- For the lemon curd filling:
- ½ cup fresh lemon juice
- ¾ cup granulated sugar
- 3 large eggs
- 1 tablespoon lemon zest
- 6 tablespoons butter, cut into small pieces
- For the cream cheese frosting:
- 8 ounces cream cheese, softened
- ½ cup butter, softened
- 4 cups powdered sugar
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the butter, granulated sugar, and lemon zest until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Alternate adding the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Stir in the lemon juice.
- Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- While the cakes are baking, prepare the lemon curd filling. In a medium saucepan, whisk together the lemon juice, granulated sugar, eggs, and lemon zest. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Remove the lemon curd from the heat and whisk in the butter until fully incorporated. Transfer the lemon curd to a bowl and cover the surface with plastic wrap. Chill in the refrigerator until ready to use.
- Once the cakes have cooled, remove them from the pans. Place one cake layer on a serving plate or cake stand. Carefully slice it in half. Spread a generous layer of lemon curd filling over the top. Place the second half of the cake layer on top. Repeat with the second layer.
- To prepare the lemon cream cheese frosting, beat the cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, lemon juice, lemon zest, and vanilla extract. Continue to beat until well combined and fluffy.
- Frost the top and sides of the cake with the lemon cream cheese frosting.
- Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld together.
